i always press my tofu
before I cook it
this way it holds up & doesn't crumble when stir fried or just browned
star by cutting strips
place strips in between napkins on a plate
place another plate on top
then I just leave it pressing on it every once and a while for about an hour
when it has been pressed you can cut into whatever sizes work best for what you are making
then brown in a bit of olive oil
